🌏 Origin: South Korean cuisine is traditionally largely based on rice, fresh and fermented vegetables, seafood and meat (while dairy products are largely absent). Popular seasonings include sesame oils, ginger, soy sauce, and fermented bean and chili pastes. Since the country experiences hot and humid summers, cold dishes are often preferred during the summer, including cold noodles.

Dishes are traditionally served and eaten in a communal style, with all the dishes served to be shared. Traditionally there’s also a unique way of arranging the dishes so that cold ones are places to one side, hot to the other, with sauces and condiments in the middle.

😋 Location: @j2korean located in Bislett blends traditional Korean ingredients and flavors with a modern western style 6 course tasting menu. The menu we had on a mild summer day started with raw slices of hamachi in a citrusy sauce, then followed by cold noodles topped with a fresh langoustine tail, Iberico pork dumplings with sides of kimchi, the restaurant’s signature J2 burger (boneless chicken wing in a black bun), sweet black cod with a puree of root vegetables and steamed broccoli, finished with a ice cream and berry compote.
